One of the producers at the forefront of the unfortified Sherry movement, Ramaro Ibanez makes wines with the aim of expressing the unique soils of Jerez. The Paganilla is a blend lot of 3 different soil types, vinified separately and then into cask for 8 months before blending. A great place to start when experimenting with these wines.
